When visiting New Orleans a few years ago, I took a food tour through the French Quarter, our guide was a local. She explained to us the basics of Nola cuisine and what makes this region so awesome!
French Creole to my understanding represents the fusion of French cuisine being created with locally grown goods. The original recipes may have called for specific produce that was not available in the New Orleans regions, so substitutions were made.

Good Morning NOLA! It is cloudy and COLD today. We will probably see some sun a little later in the afternoon. Bring sure to bundle up and get ready for tonight. Make sure your pets, pipes and people are protected because we will drop to freezing temperatures overnight. The slight rain chance for today will disappear but not the overnight lows that will stay in the thirties for the next few nights. The next few days while chilly will be clear and sunny. It ought to be a nice weekend. I’m hoping you will get out and enjoy some these pretty days while we have it.
