The French people of Louisiana were French Canadians from Nova Scotia who were driven out of their country and ended up in Louisiana.
They were called "Acadians" and that later became shortened to "Cajuns."
Some became mixed racially with the black people already living in Louisiana.
And together, spicy and delicious "Cajun Cuisine" was created.
Wonderful, isn’t it?

One long-ago summer, I was living in a tiny apartment tucked into a bamboo grove on a hill in Austin, Texas.
